2021 Stratus 2021 PVMT "Field Blend"
This unique wine is a Field Blend of three very rare varieties in Ontario – Petit Verdot, Malbec and Tannat – that were hand-picked the same date and co-fermented together. Unlike our signature “assemblage,” Red, in a field blend, it is the grapes that are “blended” together before fermentation, not the finished wines. Labelled PVMT, on eco-friendly paper with water-soluble glue for easy removal, these varieties were experimental plantings at Stratus – contributing to the winery’s philosophical trademark - “Diversity for Complexity.” Unique and delicious, the wine captures Stratus’ sustainable spirit from grape to glass.
This wine is the latest step in our environmental stewardship. It is the first in Canada to be bottled in re-used wine bottles. These bottles housed previous wine from Stratus and were collected by our consumers and the empties in the Tasting Room. By removing the labels, sterilizing and filling for the second-time, we are saving more than 90% of the emissions that would result from producing and transporting virgin glass.
