Sustainability

A lifelong journey. One vintage at a time.

The wine we grow is dependent on the health of the land on which it is grown. We farm our vineyard and guide our winemaking as though our children’s future depends on it. Each vintage bottled is a reflection of this ongoing commitment.

Our Farm

Our farm is the foundation of every bottle we craft and every story we tell. All of the fruit is tended and picked by hand, without the use of chemical pesticides or herbicides. Abundant cover crops grow beneath our trellised vines, fixing nutrients to the soil and providing food and habitat for pollinators, contributing to a healthy ecosystem. The vineyard is dry-farmed, minimally tilled and managed to be healthy for decades to come.

Our Cellar

The heart of the winery is our cellar, where we ferment, craft and bottle the wine from our estate-grown fruit. We’re perhaps best known for being a gravity-flow winery, using a pump-free process to move wine throughout the facility. This not only reduces energy consumption and waste but also ensures gentler handling and preserves more delicate aromas and flavours. Organic waste and greywater are repurposed on the farm as fertilizer or to water our vines.

Our Tasting Room

Floor-to-ceiling windows provide natural light and connect our guests to the farm’s sweeping vineyard vistas. Our facilities are heated and cooled by 16 geothermal wells and built with renewable or reused materials. We are focused on regionality and feature local farms and artisans in our food program and curated retail space.

Our Celebrations

Surrounded by all the region has to offer, we’re in the perfect location to feature Niagara produce as a centrepiece of our celebrations. By offering in-season, local produce and meats, we’re confident our guests will enjoy not only the most delicious dishes but also the most sustainably sourced ones. Every detail counts, so we’ve eliminated single-use plastics in favour of multi-use tableware rented from local suppliers.

Our Wines

In 2020, we moved to lightweight bottles, removing 18 tons of CO₂ emissions annually from our production, shipment and distribution chain. Building on our commitment to innovate, we piloted the first reused wine bottle in 2024 with our PVMT Field Blend, further reducing the environmental impact of bottling.

Pheromone Tags

We use pheromone tags to diminish the presence of destructive insects without affecting beneficial pollinators and creatures in the vineyard.

Biochar

Wine refuse is transformed into biochar, which is reintegrated into the vineyard to add carbon to the soil and reduce emissions.

Forest Sustainable Certified Barrels

All barrels are sourced from cooperages only using Forest Stewardship Council (FSC) wood, caring for long-term forest health.

Native and Drought-resistant Plants

Native perennial plants are incorporated into our landscape to provide habitat for insects and wildlife, as well as for their drought tolerance.

Rainwater Capture

Rainwater is captured from the roof to water young vines until they take root.
